INGREDIENTS
2 medium sized eggplants, peeled and cut into 1/2 inch slices
2 tsp. kosher salt
1 cup Italian seasoned breadcrumbs
1/4 cup grated Parmesan Cheese
1/2 tsp. dried basil
2 large eggs, beaten
Cooking spray, such as Pam
32 oz. jarred pasta sauce (I like Mid's Tomato Basil)
15 oz. can petit diced tomatoes
16 oz. shredded mozarella cheese
fresh basil, for garnish, if desired
