INGREDIENTS

6 boneless, skinless chicken breast halves

one 4- oz. can whole green chile peppers, rinsed, seeded, and cut in half lengthwise

2 oz. or so of sharp cheddar cheese, cut into 2 x 1/2 x 1/2 inch sticks ( 6 sticks total)

app. 6 tbsp. fresh cilantro, chopped
•
6 large pinches of cumin
•
6 large pinches of black pepper
•
1 egg, lightly beaten
•
1 tbsp. water
•
1/3 c. all purpose flour
•
3 tbps. cornmeal
•
1/4 tsp. cayenne pepper
•
2 tbsp. melted butter
•
juice of a 1/2 lime
•
12 toothpicks
