2 Cups Uncooked Rice ((makes apx. 4 cups cooked rice))

1 1/2 lbs. Shrimp (Raw, peeled, deveined with the tails removed)

2 Tablespoons olive oil (we prefer extra virgin)

1 teaspoon Cajun Seasoning (we prefer Louisiana or New Orleans style)
•
1/2 teaspoon Black Pepper (finely ground)
•
1 Tablespoon Chili Powder
•
1 Tablespoon Onion Powder
•
1 1/2 teaspoons Ground Cumin
•
1 Tablespoon Smoked Paprika (make sure you get SMOKED! It makes all the difference)

2 Limes
•
1 Bunch Cilantro (Fresh (chopped))
