4 ounces thickly sliced double-smoked bacon, cut crosswise into 1/4-inch strips
1 small onion, halved and very thinly sliced
1 teaspoon pure maple syrup
3 tablespoons crumbled soft goat cheese
2 tablespoons sour cream
1 large egg
1 egg yolk
1/4 teaspoon ground allspice
1 1/4 teaspoons fine sea salt
1/4 teaspoon freshly ground white pepper
1 cup heavy cream
3/4 cup shredded Gruyère cheese
