coconut bread with lime glaze
Great taste combo that kind of makes you want to sit on a beach with the bread and a rum drink....really!

Ingredients
- BREAD:
- 1 1/2 cups all purpose flour
- 1/2 teaspoon sea salt
- 1 teaspoon baking powder
- 3/4 cup sugar
- 1/4 cup butter - softened
- 2 large eggs
- 3/4 cup unsweetened coconutmilk (i use silk brand)
- 1/2-1 teaspoon pure vanilla extract
- 1/3 cup sweetened flaked coconut
- GLAZE:
- 1 cup powdered sugar
- 1 1/2 tablespoons fresh lime juice
- 1/3 cup sweetened flaked coconut
- - zest of 1 lime
How To Make coconut bread with lime glaze

Step 1Preheat oven to 350°F

Step 2Sift together flour, salt and baking powder. Set aside.

Step 3Mix butter and sugar. Add eggs, coconutmilk and vanilla while mixing.

Step 4Gradually mix in dry ingredients. Fold in flaked coconut.

Step 5Transfer batter to an 8x4 bread pan sprayed with non-stick product.

Step 6Bake 45-50 minutes or until toothpick can be inserted and removed clean. Allow bread to cool on rack.

Step 7Glaze: Mix powdered sugar and lime juice until smooth.

Step 8Using a toothpick, poke approximately 30 holes into the bread. (optional)

Step 9Spread half of the glaze onto coconut bread.

Step 10Mix flaked coconut with the remaining glaze. Top bread with glazed coconut and lime zest.
