2 Cups Black Eyed Peas (or crowder, purple hull, etc.) cooked and drained
1/3 cup red pepper, deveined and seeded, chopped fine
1/3 cup green pepper, deveined and seeded, chopped fine
1/3 cup Bermuda onion, chopped fine
1 cup cilantro leaves
1/4 cup olive oil
3 Tbsp. Red Wine Vinegar
Salt andFreshly ground Black Pepper to taste
1 large avocado or 3 small ones, sliced
