INGREDIENTS
1 tablespoon olive oil
1 tablespoon unsalted butter
1 onion (finely diced)
¾ cup long-grain rice
6 cups good-quality or homemade unsalted chicken stock
2 chicken breasts (on the bone, skin removed)
salt and freshly ground black pepper (to taste)
2 eggs
Zest of 1 lemon
Juice of 1 lemon
¼ cup chopped fresh parsley
