2 small Russet, Idaho, or Maris Piper potatoes, skin-on (322 grams)
1/2 lemon\'s peel
1 pinch plus 1/2 teaspoon salt, divided
3 slices soft white bread (100 grams)
150 milliliters whole milk (about 3/4 cup)
2 small green chiles or 1 big one, finely chopped*
