"Matthew Hansen, Grafton, requested the recipe for a potato salad served at Atlas BBQ, 1304 12th Ave., Grafton. He wrote: "The Chipotle Potato Salad — it's the best I have ever had." Michael Tsuchihashi, co-owner with Martha Tsuchihashi, sent the recipe along with information about the restaurant, which opened in November 2013. "Atlas BBQ is an original concept focusing on barbecue without restrictions," he said. "All our barbecue is smoked in one of our two Ole Hickory smokers with apple wood. All dishes and sauces are made from scratch, with the exception of ice cream and our kids' tenders." Executive chef Michael Strand"makes his own pickles for the sandwiches and sauerkraut for the beef brisket Reuben," Tsuchihashi said. "The chipotle potato salad is his original recipe and was introduced to our menu about a year ago....The heat from the chipotle is hot, but not overpowering, and the crispness from the fingerling potatoes really hold up well in this recipe." 2 pounds fingerling potatoes, sliced
1 cup julienne cut carrots
1 cup thinly sliced red bell pepper
1/4 cup chopped green onion
1/4 cup chopped red onion
1 1/4 cups mayonnaise
2 tablespoons Atlas Custom BBQ Rub (see note)
1 teaspoon puréed chipotle peppers in adobo sauce
