3 c. cooked chicken, shredded into bite-size pieces (Use a deli chicken for a quicker meal!)

1 c. very thinly sliced carrot

1/2 c. thinly sliced red pepper

2 green onions, thinly sliced

3 T. chopped fresh cilantro

1 to 2 heads large-leaf lettuce of your choice, leaves separated
