2 teaspoons red or sherry wine
2 teaspoons water
2 teaspoons low sodium soy sauce
1 1/2 lbs boneless, skinless chicken breasts
2 tablespoonscanola oil, divided
1 teaspoonfresh ginger, minced
2 teaspoons garlic, minced (about 3 cloves minced by hand)
1/2 cup scallions, minced
1 cup shiitake mushrooms, minced
1 (8 oz) can of bamboo shoots, drained and minced
1 (8 oz) can of water chestnuts, drained and minced
1 tablespoon Hoisin sauce
1 tablespoonlow sodium soy sauce
1 tablespoonred or sherry wine
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoonsesame oil
1 teaspoonsugar
2 teaspooncorn starch
Iceberg Lettuce leaves, washed and patted dry
