4 big artichokes
2 1/4 cup chicken broth
1/2 cup white wine
1/2 cup Vermouth
2/3 cup shallots, diced
2/3 cup carrots
3 tablespoons butter
1 garlic clove
1 1/2 cup cherry tomatoes
4 egg yolks
FOR FOAM:
1/2 cup shallots, diced
1/2 cup white wine
1/2 cup milk
1 cup Grana Padano, grated
4 tablespoons crème fraiche or sour cream
A pinch of minced garlic, optional
Fresh truffle to garnish, optional
