2 tsp. oil

1 large head romaine lettuce
•
1 head softer, lighter lettuce, such as Boston
•
1 Cup cherry tomatoes, halved
•
1 Cup croutons (optional)
•
1 red bell pepper,roasted
•
1 poblano or anaheim pepper, roasted (if you can't find these, use 2 red bell peppers)
•
2 tsp. ARIZONA DREAMING
•
1 TB. water
•
1/3 Cup light mayo (vegan mayo can be used to keep the whole recipe dairy free)
•
1 TB. balsamic or red wine vinegar
•
1 tsp. sugar (to taste)
•
1/2 tsp. salt (to taste)
