5 cups chicken stock
2 tablespoons extra-virgin olive oil
2 cups arborio rice
4 large eggs
2 cups Pecorino romano
8 small cubes fresh mozzarella cheese (or more depending on how many balls you make)
BREADING
2 eggs
1 cup flour
2 cups breadcrumbs
2/3 cup vegetable oil
1/3 cup olive oil, plus extra for frying
