INGREDIENTS
1 pound dried apricots
1/2 cup sugar, plus more for sprinkling
2 teaspoons fresh lime juice
1/2 teaspoon grated lime zest
Pinch salt
1/2 cup shelled unsalted pistachio nuts, chopped
1/2 cup caramelized pecans
1/2 cup chopped red glazed cherries (available in supermarkets)
5 large egg whites, at room temperature
1 tablespoon cornstarch
2 tablespoons water
1 teaspoon finely chopped fresh mint leaves
About 3 cups cut-up fresh fruit (bite-size pieces)
