1 teaspoon vanilla extract
1/3 cup water
1/4 cup sugar
3 tablespoons white rum or 3 tablespoons water plus 1/2 teaspoon almond extract
1 teaspoon vanilla extract
2 pounds ripe apricots, halved and pitted
1 cup sugar
1 cup apricot nectar or water, divided
2 envelopes unflavored gelatin (4 1/2 teaspoons)
1 cup heavy cream
1 cup nonfat vanilla Greek yogurt
GARNISH
4 ripe apricots, pitted and cut into wedges
