2 large egg yolks

1 medium granny smith apple, peeled & diced into chunks
1 medium pink lady or honey crisp apple, peeled & diced into chunks
1 tablespoon fresh lemon juice
1/4 cup light brown sugar
3/4 teaspoon ground cinnamon
1 pinch kosher salt
vegetable or safflower oil
1 tablespoon ground cinnamon
1/4 cup granulated sugar
