Apple Crisp Cheesecake

INGREDIENTS
1½ cups all purpose flour
½ cup unsalted butter (room temperature and quartered)
¼ cup granulated sugar
1 pc egg yolk from a large egg (room temperature )
pinch salt
2 pcs apples (peeled, cored and sliced into thin wedges)
2 tbsp unsalted butter
1 tsp ground cinnamon
½ cup salted caramel sauce (plus more for serving, see notes)
2 8-oz block cream cheese (softened)
½ cup granulated sugar
1 tsp vanilla extract
2 pcs large eggs (room temperature)
2 pcs apple (peeled, cored and diced (about the size of chickpeas))
½ cup packed brown sugar
4 tbsp unsalted butter
½ lb pecans (roughly chopped)
½ cup rolled oats (or old fashioned oats)
