INGREDIENTS
4 pounds tart apples, such as Granny Smith, peeled, cored and cut into 3/4-inch cubes
1 cup granulated sugar
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons (3/4 stick) butter
2 vanilla beans
2 tablespoons cornstarch
1/4 cup plus 2 tablespoons apple juice
1/2 teaspoon ground cinnamon
1 teaspoon grated nutmeg
Prepared puff pastry, refrigerated (see related recipe)
2 egg whites, lightly beaten
1/2 cup cinnamon sugar (1/2 cup sugar plus 1 teaspoon ground cinnamon)
Powdered sugar, for dusting
