1 largezucchini, cut into 16 pieces
1 largefree-run eggs
4-5 dash(es)hot sauce, such as cholula®
1/2 cpanko bread crumbs
1/4 cgrana padano, grated
1/4 tspsmoked paprika
1/4 tspgarlic salt
1/2 cvegetable oil, for frying
How to Make Zucchini Sticks
- In a shallow bowl, add egg and hot sauce; beat. In a large re-sealable plastic bag, combine ground panko, cheese, smoked paprika, and garlic salt. Close the bag and give a good shake until the ingredients are well blended.
- Dip zucchini sticks in egg mixture and then transfer them to the panko mixture; close the bag and shake until well coated. Transfer on a plate.
- In a medium skillet over medium-high heat, add vegetable oil. When hot but not smoking and has reached 350ºF, fry zucchini sticks in batches until golden brown, about 1 to 1 ½ minutes per side. Transfer to a plate lined with paper towel to absorb any excess oil. Serve with ranch dressing.
