This zucchini quiche is so darn tasty, so much flavor!!! Everyone always tells me to make this to bring over!

Ingredients

  • 2 cups shredded zucchini
  • 1/2 cup chopped onion
  • 1 clove minced garlic
  • 5 - eggs scrambled
  • 1/2 cup parmigiano-reggiano, grated
  • 1 cup bisquick
  • 1/2 cup vegetable oil
  • - salt & blk pepper
  • - pinch of oregano
  • 2 tablespoons chopped parsley
  • 1/4 cup mozzarella cheese shredded

How To Make zucchini quiche bake

  • Step 1
    Preheat oven 350 In one bowl combine eggs, bisquck, parm. cheese, oil, salt & pep. & mix together until mixture is smooth.
  • Step 2
    Add zucchini, onion, garlic, parsley. Once again mix together till well coated. Grease a 9x13 inch pan ( I use a glass one) Pour in pan & bake for 35-40min.
  • Step 3
    when 10min left on your timer take quiche out & sprinkle mozz. cheese on it & cook the remaining time left till cheese is melted & golden let cool off for 1/2hr. & cut in squares & serve
