This is my most asked for recipe to bring to someone's house. I don't know why it is called zucchini pie when you make it in a 9x13 inch pan, but I don't argue with greatness. You can easily cut this recipe in half, but I don't think you will want to. You can use this as an appetizer, just cut it in small squares or you can use it as a side dish. I always have this on Thanksgiving and for summer graduation, or birthday parties

Ingredients

  • 4 - eggs, beaten
  • 3 cups zucchini, shredded
  • 1 small onion, shredded
  • 1/2 cup grated parmesean cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup olive or vegetable oil
  • - salt and pepper to taste
  • 1 cup bisquick
  • 2 tablespoons parsley, chopped

How To Make zucchini pie

  • Step 1
    Preheat oven to 350. Grease a 9x13 pan. In a large bowl, mix all the ingredients together. Bake 35-40 minutes, until golden and it springs back when touched. Cut into squares. Can be served warm or room temp.
