Growing up in an Italian family you always have a lot of zucchini on hand. This is one of they ways we enjoy eating it.

Ingredients

  • 2 - eggs, slightly beaten
  • 1 cup parmigiano-reggiano, grated
  • 2 cups shredded zucchini
  • 2/3 cup bisquick
  • - salt and pepper

How To Make zucchini fritters

  • Step 1
    Mix cheese, Bisquick, pepper with the beaten eggs and then fold into the zucchini.
  • Step 2
    Drop by tablespoonfuls into hot cooking oil and deep fry. Salt as soon as they come out of the fryer.
