These are soooo good. You can use them as a side dish or for an appetizer...You could also use yellow squash, grated carrots, potatoes, instead. They are all wonderful. Hope you enjoy them.

  • 5 Tbsp
    bisquick baking mix
  • 1/4 c
    parmesan cheese
  • 1/4 tsp
  • 1/8 tsp
  • 2 large
  • 2 Tbsp
    butter or margarine
  • 2 c
    grated zucchini

How to Make Zucchini Fritters


  1. Blend Bisquick, parmesan cheese, salt and pepper: Add the two eggs and the grated zucchini, making a batter
  2. Melt the butter over medium heat in a skillet and pour batter, as if you were making small pancakes. Fry for 3 minutes on each side. Serve while warm.
