Family. I was the only girl growing up with 5 brothers. My mother and I were always in the kitchen cooking for my Dad and five brothers. I guess I was her sous chef. This recipe was always a hit at functions. I hope you enjoy!
·3 cups grated zucchini
·1 small or 1/2 large onion grated
·1 clove garlic minced
·2 cups bisquick or cake flour
·1/2 cup vegetable oil
·1/4 cup grated parmesan cheese
·1/4 teaspoon salt & pepper
·2 tablespoons dried parsley
·4 eggs mixed separately
How to Make Zucchini fingers
- Mix the following together in a large mixing bowl. 2 medium zucchini’s grated(washed and skin on), 1 small onion grated, 1 clove garlic minced, 1/2 cup vegetable oil, 1/4 tsp salt & pepper, 2 tbsp parsley and 1/4 cup grated cheese.
- Mix 4 eggs in separate bowl. Add eggs and mix together with above ingredients.
- Finally add 2 cups of bisquick. Mix until well blended. Pour into a well greased 9x13 baking dish. (I pour about 2 tbsps of vegetable oil on bottom of pan).
- Bake in a 350 oven for 35 to 45 mins until top is browned. Cool 15 minutes before cutting. Enjoy
