zucchini fingers
This was my mom's recipe. She is now passed but has given me the knowledge of cooking, baking, and preparing meals for large amounts of family. I was the only girl growing up with 5 brothers. My mother and I were always in the kitchen cooking for my dad and five brothers. I guess I was her sous chef. This recipe was always a hit at functions. I hope you enjoy!
Blue Ribbon Recipe
When zucchini is plentiful, we're always looking for different ways to cook with it. These zucchini fingers are a great way to use them. This savory dish makes a moist bread with an almost egg quality. Garlic and onion add a lot of flavor. When cut into slices, they're easy to pick up and snack on during the day. If browned sausage or ground beef was added to these, they could be eaten as a meal. These are tasty!
Ingredients
- 3 cups grated zucchini (washed and skin on)
- 1 small or 1/2 large onion, grated
- 1 clove garlic, minced
- 2 cups Bisquick or cake flour
- 1/2 cup vegetable oil
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt and pepper
- 2 tablespoons dried parsley
- 4 - eggs, mixed separately
How To Make zucchini fingers

Step 1Mix the following together in a large mixing bowl - grated zucchini, grated onion, minced garlic, 1/2 cup vegetable oil, salt, pepper, parsley, and grated cheese.

Step 2Mix 4 eggs in a separate bowl. Add eggs and mix together with the above ingredients.

Step 3Finally, add 2 cups of Bisquick. Mix until well blended.

Step 4Pour into a well-greased 9x13 baking dish. (I pour about 2 Tbsp of vegetable oil on the bottom of the pan.)

Step 5Bake in a 350 oven for 35 to 45 mins until the top is browned.

Step 6Cool 15 minutes before cutting. Enjoy!
