Great recipe for extra zucchini you might have from the garden. Works as an appetizer or side dish.

Ingredients For zucchini cheese fritters

  • 1 lg
    zucchini, shredded
  • 1 Tbsp
    minced garlic
  • 1
    egg
  • 1/2 c
    italian bread crumbs
  • 1/2 c
    4 cheese italian blend, shredded cheese
  • salt & pepper to taste
  • olive oil for cooking

How To Make zucchini cheese fritters

    Squeeze out extra water from shredded zucchini in cheese cloth or towel.

    Mix together zucchini, cheese, bread crumbs and garlic. Add in egg, salt and pepper and mix some more. You want a sticky type mixture, so if you need another egg, you can add it in.

    Heat up olive oil to medium-high heat in large pan. Add in zucchini mixture, 1 tablespoon at a time, flattening them down as you go. As they start to brown, flip them over to other side and brown again. Watch them carefully as they will brown quickly.

    Remove from pan when browned, lay on paper towel to absorb excess oil. Sprinkle with more salt & pepper to taste, serve with sour cream.
