zucchini appetizers

Our son and his wife are vegetarians so I am always challenged to come up with new things for them. I made these as an appetizer and everyone loved them. They freeze well also and are wonderful for breakfast.

Ingredients For zucchini appetizers

  • 3 c
    thinly sliced uncooked zucchini (about 4 small)
  • 1 c
    bisquick baking mix
  • 1/2 c
    finely chopped onion
  • 1/2 c
    grated parmesan cheese
  • 2 Tbsp
    parsley flakes or fresh snipped
  • 1/2 tsp
  • 1/2 tsp
    oregano, dried
  • 1 clove
    garlic finely chopped
  • 1/2 c
    vegetable oil
  • 4
    eggs, slightly beaten
  • dash of pepper

How To Make zucchini appetizers

  • 1
    preheat oven to 350 degrees. Grease 13X9 pan. Mix all ingredients, spread in pan.

    Bake until golden brown, about 25 minutes. Cut into pieces. Enjoy!
