zucchini appetizers
Our son and his wife are vegetarians so I am always challenged to come up with new things for them. I made these as an appetizer and everyone loved them. They freeze well also and are wonderful for breakfast.

Ingredients
- 3 cups thinly sliced uncooked zucchini (about 4 small)
- 1 cup bisquick baking mix
- 1/2 cup finely chopped onion
- 1/2 cup grated parmesan cheese
- 2 tablespoons parsley flakes or fresh snipped
- 1/2 teaspoon salt
- 1/2 teaspoon oregano, dried
- 1 clove garlic finely chopped
- 1/2 cup vegetable oil
- 4 - eggs, slightly beaten
- - dash of pepper
How To Make zucchini appetizers

Step 1preheat oven to 350 degrees. Grease 13X9 pan. Mix all ingredients, spread in pan.

Step 2Bake until golden brown, about 25 minutes. Cut into pieces. Enjoy!
