From my 10yr old to my Father-in-Law - this one is a family favorite! Good way to get vegetables into those picky eaters

Ingredients

  • 6 large yellow squash
  • 1 cup all purpose flour
  • 1/2 cup self-rising buttermilk corn meal
  • 2 large egg yolks
  • 1 large onion
  • 3 cups cheddar cheese, shredded
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons canola oil

How To Make yellow squash patties

  • Step 1
    wash peal and shred the yellow squash
  • Step 2
    mix all ingredients together in mixing bowl except canola oil
  • Step 3
    heat canola oil in drying pan until sizzling- then spoon the mixture into the hot oil - fry until golden brown.
  • Step 4
    enjoy!!!!!!!
