My mom makes this every year for Thanksgiving. It is one of my favorites! Unfortunately, I do not get to go home this year for Thanksgiving so I had her email the recipe to me so I could make it. I hope you guys like it too.

Blue Ribbon Recipe

These whipped sweet potatoes are a quick side dish for your holiday meal. Once baked, the marshmallows crisp up. When serving, the spoon goes through them to reveal thick and creamy mashed sweet potatoes. Similar in texture to a sweet potato souffle, they are slightly sweet from being packed in syrup and spiced with cinnamon and nutmeg. A nice contrast to the sweet marshmallows.

Ingredients

  • 3 cans sweet potatoes (15 oz. each)
  • 1/4 cup butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3 cups miniature marshmallows

How To Make whipped sweet potato bake

  • Heat the canned sweet potatoes.
    Step 1
    Preheat the oven to 350 degrees F. Heat the canned sweet potatoes in a medium saucepan with the syrup.
  • Add the butter, cinnamon, salt, and nutmeg.
    Step 2
    Drain the syrup and return the sweet potatoes to the saucepan. Add the butter, cinnamon, salt, and nutmeg.
  • Beat with an electric mixer.
    Step 3
    Beat with an electric mixer on medium speed until well blended.
  • Spoon into a baking dish.
    Step 4
    Spoon into lightly greased 1-1/2 quart baking dish.
  • Top with marshmallows and bake.
    Step 5
    Top with the marshmallows. Bake for 15-20 minutes or until the sweet potato mixture is heated through and the marshmallows are lightly brown.
