three cheese & spinach balls

I know there are a lot of recipes out there for spinach balls. This recipe does not call for stuffing mix & has a blend of 3 cheeses, so it is a little different. Of course, the 3rd cheese is in the salad dressing! My family always thought they were very good.

Ingredients

  • 1 package 10 oz. frozen chopped spinach
  • 1/2 cup chopped onion
  • 2 - slightly beaten eggs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup blue cheese salad dressing
  • 1/4 cup butter or margerine, melted
  • 1/8 teaspoon garlic powder
  • 1 package 8.5 oz corn muffin mix

How To Make three cheese & spinach balls

  • Step 1
    In saucepan, combine spinach & onion; cook according to spinach package directions. Drain well, pressing out excess liquid. Combine eggs, cheeses, salad dressing, butter and garlic powder. Add spinach mixture & muffin mix; mix well. Cover and chill.
  • Step 2
    Shape dough into 1" balls. Cover & chill until serving time. OR you can freeze. To serve, place chilled or frozen puffs on a baking sheet. Bake at 350 till light brown. Bake chilled puffs for 10-12 minutes and frozen puffs for 12-15 minutes. Serve warm.
