I know there are a lot of recipes out there for spinach balls. This recipe does not call for stuffing mix & has a blend of 3 cheeses, so it is a little different. Of course, the 3rd cheese is in the salad dressing! My family always thought they were very good.

Ingredients

1 pkg
10 oz. frozen chopped spinach
1/2 c
chopped onion
2
slightly beaten eggs
1/2 c
grated parmesan cheese
1/2 c
shredded cheddar cheese
1/2 c
blue cheese salad dressing
1/4 c
butter or margerine, melted
1/8 tsp
garlic powder
1 pkg
8.5 oz corn muffin mix

Step-By-Step

1In saucepan, combine spinach & onion; cook according to spinach package directions.
Drain well, pressing out excess liquid.
Combine eggs, cheeses, salad dressing, butter and garlic powder.
Add spinach mixture & muffin mix; mix well.
Cover and chill.
2Shape dough into 1" balls. Cover & chill until serving time. OR you can freeze.

To serve, place chilled or frozen puffs on a baking sheet. Bake at 350 till light brown.
Bake chilled puffs for 10-12 minutes and frozen puffs for 12-15 minutes.
Serve warm.
