Ingredients
- 1 can 15 ounces black-eyed peas, rinsed and drained
- 1/4 cup thinly sliced green onions, about two
- 1/4 cup finely chopped red sweet pepper
- 2 tablespoons cooking oil
- 2 tablespoons cider vinegar
- 1 to 2 - fresh jalapeno peppers, seeded and chopped
- 1/4 teaspoon cracked black pepper
- dash - salt
- 2 cloves garlic, minced

Step 1In a bowl, combine the black-eyed peas, green onions, red pepper, oil, vinegar, jalapeno pepper, salt, pepper and garlic.

Step 2Cover and chill overnight. Serve the mixture with crackers or tortilla chips.
