15 ounces black-eyed peas, rinsed and drained
1/4 c
thinly sliced green onions, about two
1/4 c
finely chopped red sweet pepper
2 Tbsp
cooking oil
2 Tbsp
cider vinegar
1 to 2
fresh jalapeno peppers, seeded and chopped
1/4 tsp
cracked black pepper
2 clove
garlic, minced

How to Make Texas Caviar


  • 1In a bowl, combine the black-eyed peas, green onions, red pepper, oil, vinegar, jalapeno pepper, salt, pepper and garlic.
  • 2Cover and chill overnight. Serve the mixture with crackers or tortilla chips.
