Trying to eat your salad without dressing?? This one is for you, no dressing needed. You get a wonderful different surprise in every bite, and the pickled jalapeno juice slightly brines the tomatoes.

Ingredients

  • - **roma tomatoes
  • - **sweet & hot pickled jalapenos
  • - **red onion
  • - **fresh chopped cilantro
  • - **crumbled crisp bacon, reduce sodium
  • - **chopped pecans
  • - **queso fresco cheese

How To Make tex mex fresh tomato salad

  • Step 1
    I chopped my tomatoes into large bite size pieces, then diced some red onion and placed both in a bowl with some pickled jalapeno slices and a little juice. I use Uncle Gary's Candied Jalapenos, they are sweet and hot and delicious.
  • Step 2
    After about 20 min I drained the juice and added crumbled bacon, chopped pecans, chopped cilantro and queso fresco cheese.
