Sue our nurse practitioner brought this salsa to one of our pitch ins. Its cold crisp and full of flavor. You know it was great because it was all gone.

black eyed peas
1 can(s)
pinto beans
1 can(s)
black beans
1 can(s)
white shoepeg corn
1 oz
jar sliced pimento
1 c
diced celery
1 small
diced onion
1 c
dice green pepper
1 c
apple cider vinegar
1/4 c
canola oil
3/4 to 1 c


1drain, rinse, and toss black eyed peas, pinto beans, white shoepeg corn and pimento with celery,onion and green pepper
2in a separate microwaveable bowl mix apple cider vinegar, canola oil, and sugar
3microwave at 20 to 30 second intervals stirring in between till all sugar is dissolved into clear liquid
4pour mixture over beans and veggies and refrigerate over night
sever with scopes
