stuffed tomatoes
i never liked avacado's til i learned i wasn't lettin them get ripe.. i lov them in this recipe i came up with a few yrs ago..this goes on my x-mas dinner table every yr now....hope ya like it too!!!

Ingredients
- 6-8 medium roma tomatoes
- 3-4 medium very ripe avacado's
- 1 large lemon,zest and juice
- 6 slices thick cut hickory bacon
- 1 small white onion,chopped fine
- 1/2 cup salted peanuts,chopped course,divided
- 2 tablespoons sour cream
- 1 package [8 oz] softened cream cheese
How To Make stuffed tomatoes

Step 1cut top off each tomato carfully remove "meat" from inside leaving a hollowed out tomato shell[save "meat" and use somewhere else] now salt each tomato and sit upside down on papper towl while u make the rest

Step 2cut bacon into small pieces and fry over med heat til crisp add chopped onion and cut thil it limp sit aside to cool

Step 3now juice and zest lemon put in med bowl peal and core avacado...mash into lemon jiuce now add bacon/onion to avacado mix well add cream cheese and sour cream add most of the peanuts stir

Step 4fill each tomato with filling... put in fridge for several hrs jus before seving sprinkle last of peanuts on top
