8 medium
bell peppers, green, yellow, red
2 clove
2 Tbsp
1/2 Tbsp
thyme, dried
1/2 Tbsp
1 small
1/2 c
parmesan or pepper jack
1/2 c
mozzarella cheese
1 c
shredded zuchini
1/2 c
onion, chopped
1/2 c
tomato chopped
1/2 c
spinach (optional)
1/4 c
italian bread crumbs

How to Make Stuffed Bell Peppers


  • 1Saute your herbs in a small amount of olive oil. Then add the cheese, bread crumbs and one egg. Stir in the vegetables (minus the bell peppers of course) and saute until tender.
  • 2Preheat oven to 325 degrees. Cut your peppers into halves. Stuff your peppers with your mixture. Place them on a cookie sheet or baking sheet. Bake for about 35-45 minutes.
  • 3Remove from heat and top with more cheeses. You can add some olive oil to the pan drippings and pour over peppers. Serve and enjoy.
