This is a delicious recipe I put together myself just choosing exactly what I wanted in them.

Ingredients

  • 8 medium bell peppers, green, yellow, red
  • 2 cloves garlic
  • 2 tablespoons parsley
  • 1/2 tablespoon thyme, dried
  • 1/2 tablespoon oregano
  • 1 small egg
  • 1/2 cup parmesan or pepper jack
  • 1/2 cup mozzarella cheese
  • 1 cup shredded zuchini
  • 1/2 cup onion, chopped
  • 1/2 cup tomato chopped
  • 1/2 cup spinach (optional)
  • 1/4 cup italian bread crumbs

How To Make stuffed bell peppers

  • Step 1
    Saute your herbs in a small amount of olive oil. Then add the cheese, bread crumbs and one egg. Stir in the vegetables (minus the bell peppers of course) and saute until tender.
  • Step 2
    Preheat oven to 325 degrees. Cut your peppers into halves. Stuff your peppers with your mixture. Place them on a cookie sheet or baking sheet. Bake for about 35-45 minutes.
  • Step 3
    Remove from heat and top with more cheeses. You can add some olive oil to the pan drippings and pour over peppers. Serve and enjoy.
