This is a delicious recipe I put together myself just choosing exactly what I wanted in them.

Ingredients
- 8 medium bell peppers, green, yellow, red
- 2 cloves garlic
- 2 tablespoons parsley
- 1/2 tablespoon thyme, dried
- 1/2 tablespoon oregano
- 1 small egg
- 1/2 cup parmesan or pepper jack
- 1/2 cup mozzarella cheese
- 1 cup shredded zuchini
- 1/2 cup onion, chopped
- 1/2 cup tomato chopped
- 1/2 cup spinach (optional)
- 1/4 cup italian bread crumbs
How To Make stuffed bell peppers

Step 1Saute your herbs in a small amount of olive oil. Then add the cheese, bread crumbs and one egg. Stir in the vegetables (minus the bell peppers of course) and saute until tender.

Step 2Preheat oven to 325 degrees. Cut your peppers into halves. Stuff your peppers with your mixture. Place them on a cookie sheet or baking sheet. Bake for about 35-45 minutes.

Step 3Remove from heat and top with more cheeses. You can add some olive oil to the pan drippings and pour over peppers. Serve and enjoy.
