  • 6
    small banana peppers
  • ·
    olive oil
  • 4 oz
    light cream cheese
  • 1/4 tsp
    crushed garlic
  • 1/8 tsp
    black pepper
  • ·
    salt to taste
  • 1 tsp
    sriracha sauce
  • 2 Tbsp
    chopped chives
  • 2
    serrano peppers, finely sliced
  • 1/4 c
    chopped walnuts
  • 1/4 c
    shredded cheese

How to Make Stuffed Banana Peppers

  1. Preheat toaster oven to 350°. Cut peppers length-wise and remove seeds, trying to retain a short stem. Toss with a little olive oil and place open side up on a sprayed pan.
  2. Roast in toaster oven for about 10 minutes. Remove from oven, pat inside of peppers dry, and cool.
  3. In the meantime, mix the remainder of the ingredients together in the order listed. Use a fork or mixer to mix.
  4. Raise heat in toaster oven to 375°. Fill peppers with cheese mix. Bake for about 8 minutes, watching for cheese to start to brown.
  5. Note: If using a regular oven, bake times will probably be longer.
