stuffed baby sweet peppers
I went to Sams and bought a huge bag of baby sweet peppers. I had so many left over a week later I needed to be inventive instead of repetative. So I hope you try these, they are truely a wonder!! Super easy to make too...

Ingredients
- 1- 8 ounces cream cheese softened
- 1/4 cup cheddar cheese, shredded
- 3 slices thick bacon minced, cooked, drained
- 1/4 teaspoon oregano, dried
- 1/4 teaspoon black cracked pepper
- 1/8 teaspoon garlic
- 1 sprig scallions fine diced
- 2 pinches dried chives
- 20 small sweet peppers hollowed out
How To Make stuffed baby sweet peppers

Step 1Hollow out you peppers. Rinse, Dry , and set aside.

Step 2In a pot, render your minced bacon in a pot with a tsp. olive oil. Drain on a paper towel. set aside to cool.

Step 3Mince up 1 whole scallion - you can add more if you like - adds amazing flavor. mix into cream cheese.

Step 4Add all your spices. then add your Shredded Cheddar cheese.

Step 5Add your bacon and mix everything together.

Step 6Stuff into your peppers. Note: the best way I noticed to cook these is in a mini cupcake pan. this way they wont fall over and spill out while cooking.
