Ingredients
- 4 artichokes
- 1 onion minced
- 2 garlic cloves minced
- 1 tablespoon olive oil
- 2 tablespoons parsley
- 4 tablespoons parm or romano cheese
- 1 cup soft breadcrumbs
- 1/4 teaspoon black pepper
- salt to taste
- 2 tablespoons olive oil
How To Make stuffed artichokes

Step 1Preheat oven to 350 degrees. Cut off top 1/4 of artichokes. Remove bottom leaves and stems and put artichokes and stems in about 1-1/2" boiled salt water, cover and cook 20 min. Drain; peel and chop stems, set aside. Saute onion and garlic in oil until yellow. Add parsley, cheese, soft breadcrumbs, chopped stems, pepper and salt. Remove fuzzy centers of artichokes with a spoon or your fingers. Then fill the centers with stuffing and place the rest of the stuffing between outer large leaves. Place artichokes in baking dish with 1/2" water. Pour remaining oil over artichokes and cover and bake at 350 degrees, basting occasionally w/drippings until base of artichokes are very tender - about 30-45 minutes.
