Another variation of an old favorite.

Ingredients

  • 6 ounces stove top chicken stuffing, 1 pkg.
  • 1 1/2 cups hot water
  • 40 - mushrooms, fresh
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and drained well
  • 1 cup mozzarella cheese, shredded
  • 1 cup fresh parmesan cheese, shredded
  • 3-4 slices bacon, fried crisp and crumbled (optional)

How To Make spinach stuffed mushrooms

  • Step 1
    Preheat oven to 400F.
  • Step 2
    Mix stuffing and water.
  • Step 3
    Remove stems from mushrooms.
  • Step 4
    Dice mushroom stems.
  • Step 5
    Melt butter in skillet. Add stems and garlic. Cook until tender.
  • Step 6
    Add spinach, cheeses and bacon to stuffing. Mix well.
  • Step 7
    Spoon into mushroom caps.
  • Step 8
    Bake 20 minutes or until tender.
