My aunt Ro makes these and let me tell you, we love these things! They are intended as an appetizer but I have used it as a side dish and a brunch dish as well.

Ingredients

  • 1 stick
    butter
  • 1 c
    milk
  • 2
    eggs
  • 1 c
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 1 pkg
    (10 oz) chopped spinach, thawed and squeezed dry
  • 1 lb
    shredded cheddar

How to Make Spinach Squares

Step-by-Step

  1. Mix butter, milk, and eggs together. Mix the flour, powder and salt together and add to the egg mixture. Blend well. Add the spinach to the mix, then the cheese. Mix together.
  2. Bake in a well greased baking dish for 35-45 minutes in a preheated 325 degree oven.
  3. Let cool completely and cut into small squares. Enjoy
