An employee I worked with brought this recipe in one day and I fell in love with it. I'm not a big fan of spinach and hesitated but I loved these bars. I've been making this for about 13 years now and it still gets raves when I serve them or bring them to someone. Please enjoy.

Enjoy these cheesy spinach bars when they're still warm or at room temperature. This is a super simple and versatile dish. They can be an addition to a brunch buffet, served as a side dish, or eaten as an appetizer. You can jazz these up by adding different types of cheese, such as pepper jack or smoked cheese.

Ingredients

  • 1 package frozen chopped spinach, thawed and squeeze out excess water (12 oz)
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 stick butter, softened
  • 1 pound Monterey jack cheese, cubed
  • 2 large eggs

How To Make spinach cheese bars

  • Eggs and softened butter in a bowl.
    Step 1
    Preheat oven to 350 degrees. Beat together the softened butter and eggs.
  • Milk, flour, baking powder, and salt added to the eggs.
    Step 2
    Mix in milk, flour, baking powder, and salt.
  • Folding in spinach and cheese.
    Step 3
    Fold in spinach and cheese.
  • Spinach mixture poured into a baking dish.
    Step 4
    Spread in a 9x13" pan sprayed with cooking spray.
  • Baking the spinach cheese bars.
    Step 5
    Bake in preheated oven for 40-45 minutes. Once baked, cut into small squares to serve. Can be eaten cold.
