spinach cheese bars
An employee I worked with brought this recipe in one day and I fell in love with it. I'm not a big fan of spinach and hesitated but I loved these bars. I've been making this for about 13 years now and it still gets raves when I serve them or bring them to someone. Please enjoy.

Enjoy these cheesy spinach bars when they're still warm or at room temperature. This is a super simple and versatile dish. They can be an addition to a brunch buffet, served as a side dish, or eaten as an appetizer. You can jazz these up by adding different types of cheese, such as pepper jack or smoked cheese.

Ingredients
- 1 package frozen chopped spinach, thawed and squeeze out excess water (12 oz)
- 1 cup milk
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 stick butter, softened
- 1 pound Monterey jack cheese, cubed
- 2 large eggs
How To Make spinach cheese bars

Step 1Preheat oven to 350 degrees. Beat together the softened butter and eggs.

Step 2Mix in milk, flour, baking powder, and salt.

Step 3Fold in spinach and cheese.

Step 4Spread in a 9x13" pan sprayed with cooking spray.

Step 5Bake in preheated oven for 40-45 minutes. Once baked, cut into small squares to serve. Can be eaten cold.
