An employee I worked with brought this recipe in one day and I fell in love with it. I'm not a big fan of spinach and hesitated but i loved these bars. I've been making this for about 13 years now and it still gets raves when I serve them or bring them to someone.

frozen chopped spinach (small box type in grocery freezer) thawed and squeeze out excess water
1 c
milk
1 c
flour
1 tsp
baking powder
1 tsp
salt
1/4 lb
butter, softned
1 lb
monterey jack cheese, cubed
2
eggs

How to Make Spinach Cheese Bars

Step-by-Step

  • 1Mix together in bowl and spread in a 9x13" pan. ( I use 9x13" glass pan)
  • 2Bake in 350 degree oven for 40-45 minutes.
  • 3Cut into small squares to serve. Can be eaten cold.
