OMG...I do love these things! I keep them in the freezer so I can take out the amount I want to cook, especially when unexpected guests arrive. Gotta feed folks when they drop by.

Ingredients

  • 2 boxes frozen spinach, thaw, squeeze, & pat dry
  • 2 - eggs, beaten
  • 2 cups shredded cheese (i use sharp cheddar)
  • 1 cup chopped onion
  • 1 stick *margarine, melted (don't use butter)
  • 2 cups italian bread crumbs
  • - garlic powder & cayenne (to taste)

How To Make bea's spinach balls

  • Step 1
    Combine all ingredients well and roll into bite-size balls. I usually have them a tad bit larger than a quarter.
  • Step 2
    Bake on an ungreased cookie sheet @ 325-350 for approximately 20-25 minutes. Serve warm. *I cook the entire batch and then freeze most of them. Just pop them in the microwave, oven or toaster oven and heat through.
  • Step 3
    I normally serve them with a dip, such as, Ranch dressing, honey mustard or yum yum sauce.
  • Step 4
    Note: If you rather use butter cut back to 3/4 stick (5 or 6 TBSP) do they will be too greasy for this particular recipe.
