A great take on traditional Humus

Ingredients

  • 4 cans cooked chickpeas, drained & rinsed
  • 2 - sweet potatoes (approx. 1#)
  • 2 tablespoons tahini
  • 1/3 cup olive oil
  • 2 - limes, juice of
  • 1 tablespoon smoked paprika
  • 3/4 teaspoon minced garlic
  • 1/2 teaspoon ground coriander
  • - 1/4 to 1 teaspoon salt, to taste

How To Make spiced sweet potato hummus

  • Step 1
    Bake sweet potatoes at 400 degrees for 1 hr. let cool completely and discard skins and cut into chunks.
  • Step 2
    Combine all ingredients into a food processor and blend until smooth and creamy.
  • Step 3
    Serve with Pita Chips and cut up vegtables
