Six Onion Pate
I adapted it from an recipe that I got from somewhere years ago.
3 Tbspolive oil
1-2leeks, diced (depending on how much you like leeks - their flavor can be strong)
1vidalia onion, diced
1/2 cshallot, diced (1 or 2 shallot, depending on size)
2 Tbspgarlic, minced (6 or 7 cloves depending on size)
3green onions, sliced
·salt and pepper to taste
2 Tbspchives, chopped
How to Make Six Onion Pate
- Saute onion, leeks, garlic, shallots, green onion and thyme in olive oil until soft and transluscent.
- Cool completely then place in food processor along with the mayonnaise and chives. Process until desired smoothness.
- Chill about an hour so flavors blend, then serve cold (or if you prefer, allow to come back to room temp) with crackers or pita or bagel chips.
