This is an onion lovers delight! I adapted it from a recipe that I got from somewhere years ago.

Ingredients
- 3 tablespoons olive oil
- 1-2 - leeks, diced (depending on how much you like leeks - their flavor can be strong)
- 1 - vidalia onion, diced
- 1/2 cup shallot, diced (1 or 2 shallot, depending on size)
- 2 tablespoons garlic, minced (6 or 7 cloves depending on size)
- 3 - green onions, sliced
- 2 teaspoons thyme
- - salt and pepper to taste
- 3 tablespoons mayonnaise
- 2 tablespoons chives, chopped
How To Make six onion pate

Step 1Saute onion, leeks, garlic, shallots, green onion and thyme in olive oil until soft and transluscent.

Step 2Cool completely then place in food processor along with the mayonnaise and chives. Process until desired smoothness.

Step 3Chill about an hour so flavors blend, then serve cold (or if you prefer, allow to come back to room temp) with crackers or pita or bagel chips.
