- - 8 strips thick sliced bacon, chopped
- - 1 tbsp. brown sugar
- - 1 tsp. chili powder
- - 1 tsp. cracked black pepper
- - 1 cup yellow cornmeal
- - 1 cup pale lager beer, such as corona
- - 1/2 cup flour
- - 1/2 tsp. baking powder
- - 1/2 tsp. kosher salt
- - 3/4 cup purchased salsa
- - 1 jalapeno, seeded and minced

Step 1Cook bacon in nonstick skillet til crisp. Transfer bacon to paper towel lined plate;reserve drippings. add brown sugar, chili powder and black pepper to skillet along with cooked bacon. Cook, stirring til sugar melts and spices coat bacon.

Step 2preheat waffle iron according to manufacture's recommendations. Stir together cornmeal and beer. Let mixture stand 15 minutes so cornmeal absorbs beer.

Step 3Whisk together flour, baking powder, and salt; stir into cornmeal mixture along with spiced bacon, 2 Tbsp. drippings, salt, and jalapeno. Pour 1 tsp. bacon drippings into each waffle iron section and heat 1 minute. Scoop 1 Tbsp. waffle batter onto each iron section and cook til crisp, about 5 minutes; repeat til all batter is cooked. For best results, stir bacon til brown sugar melts and the spices cling to the bacon.
