8 strips thick sliced bacon, chopped
1 tbsp. brown sugar
1 tsp. chili powder
1 tsp. cracked black pepper
1 cup yellow cornmeal
1 cup pale lager beer, such as corona
1/2 cup flour
1/2 tsp. baking powder
1/2 tsp. kosher salt
3/4 cup purchased salsa
1 jalapeno, seeded and minced

How to Make Savory Corn Waffles with spiced Bacon


  • 1Cook bacon in nonstick skillet til crisp. Transfer bacon to paper towel lined plate;reserve drippings. add brown sugar, chili powder and black pepper to skillet along with cooked bacon. Cook, stirring til sugar melts and spices coat bacon.
  • 2preheat waffle iron according to manufacture's recommendations. Stir together cornmeal and beer. Let mixture stand 15 minutes so cornmeal absorbs beer.
  • 3Whisk together flour, baking powder, and salt; stir into cornmeal mixture along with spiced bacon, 2 Tbsp. drippings, salt, and jalapeno. Pour 1 tsp. bacon drippings into each waffle iron section and heat 1 minute. Scoop 1 Tbsp. waffle batter onto each iron section and cook til crisp, about 5 minutes; repeat til all batter is cooked. For best results, stir bacon til brown sugar melts and the spices cling to the bacon.
