These patties make a great appetizer or can be served with brunch or a light lunch. **Be sure to use a non-stick skillet or patties will stick.

Ingredients

  • 1 package 10-oz. pkg. frozen chopped spinach, thawed
  • 1/2 cup ricotta cheese, low fat
  • 1 egg, beaten
  • 1/3 cup parmesan cheese, grated
  • 1/4 cup ritz cracker crumbs

How To Make ricotta-spinach patties with lemon yogurt sauce

  • Step 1
    Using a large bowl, combine all ingredients until well blended.
  • Step 2
    Divide mixture into 16 balls and slightly flatten each one to form patties - approx. 1/2 inch thick.
  • Step 3
    Heat a lightly oiled NON STICK skillet and cook patties until they are firm and browned on both sides - approx. 15 minutes.
  • Step 4
    Meanwhile make dipping sauce by combining all ingredients until well blended.
