- 1 package 10-oz. pkg. frozen chopped spinach, thawed
- 1/2 cup ricotta cheese, low fat
- 1 egg, beaten
- 1/3 cup parmesan cheese, grated
- 1/4 cup ritz cracker crumbs
How To Make ricotta-spinach patties with lemon yogurt sauce

Step 1Using a large bowl, combine all ingredients until well blended.

Step 2Divide mixture into 16 balls and slightly flatten each one to form patties - approx. 1/2 inch thick.

Step 3Heat a lightly oiled NON STICK skillet and cook patties until they are firm and browned on both sides - approx. 15 minutes.

Step 4Meanwhile make dipping sauce by combining all ingredients until well blended.
