A neighbor came to my rescue one summer when I'd planted more cucumbers than I could eat. Now we have them whether I garden or not. So easy!

Ingredients

2 large
cucumbers, peeled and sliced
1 medium
green pepper, chopped
1 c
vinegar (either white or apple cider)
1 tsp
celery seed
2/3 c
sugar
1/2 c
chopped onion
1 1/2 tsp
salt

How to Make Refrigerator Sweet Pickles

Step-by-Step

  • 1Combine cukes, peppers, onions, and celery seed in layers to help distribute flavor in a quart jar. Combine the rest of the ingredients and pour over cucumber mixture.
  • 2Refrigerate for at least one hour before eating, overnight is better.
  • 3When there is room in the jar you can simply add more cucumbers to make more pickles. I can get 2 or 3 rounds out of the vinegar before it gets too watered down to give good flavor.
