Ingredients
- 2 large cucumbers, peeled and sliced
- 1 medium green pepper, chopped
- 1 cup vinegar (either white or apple cider)
- 1 teaspoon celery seed
- 2/3 cup sugar
- 1/2 cup chopped onion
- 1 1/2 teaspoons salt
How To Make refrigerator sweet pickles

Step 1Combine cukes, peppers, onions, and celery seed in layers to help distribute flavor in a quart jar. Combine the rest of the ingredients and pour over cucumber mixture.

Step 2Refrigerate for at least one hour before eating, overnight is better.

Step 3When there is room in the jar you can simply add more cucumbers to make more pickles. I can get 2 or 3 rounds out of the vinegar before it gets too watered down to give good flavor.
