One of our favorite snacks! And a great use of leftover baked potatoes!

leftover baked potatoes
cheddar cheese, shredded
green onion, sliced thinly
crisp bacon, chopped
sour cream
salsa of choice

How to Make Potato Skins


  • 1Pre-heat oven 350.
    Take leftover baked potatoes and cut in half.
    Scoop out center, leaving about a 1/4 inch left in shell. (Save scooped out for fried potatoes for breakfast). Spray potatoes with cooking spray, or brush lightly with oil. Bake 20 minutes, or till lightly browned.
  • 2Take potatoes out of oven and sprinkle with cheese, onion and bacon pieces. Place in oven again till cheese is melted about 10 more minutes.
  • 3While the potatoes are baking make dip for them by adding as much sour cream and salsa together to taste! I do half and half. Can also use plain yogurt in place of sour cream!
