Ingredients
- - leftover baked potatoes
- - cheddar cheese, shredded
- - green onion, sliced thinly
- - crisp bacon, chopped
- - sour cream
- - salsa of choice
How To Make potato skins

Step 1Pre-heat oven 350. Take leftover baked potatoes and cut in half. Scoop out center, leaving about a 1/4 inch left in shell. (Save scooped out for fried potatoes for breakfast). Spray potatoes with cooking spray, or brush lightly with oil. Bake 20 minutes, or till lightly browned.

Step 2Take potatoes out of oven and sprinkle with cheese, onion and bacon pieces. Place in oven again till cheese is melted about 10 more minutes.

Step 3While the potatoes are baking make dip for them by adding as much sour cream and salsa together to taste! I do half and half. Can also use plain yogurt in place of sour cream!
