pizza stuffed mushrooms
I saw this recipe posted, and had to make some alterations so that I could eat it. The recipe is the way I altered it...and I am even thinking about trying it in pepper halves instead of mushrooms, since none of my inlaws will eat mushrooms!

Ingredients
- 6-8 - medium large mushroom caps, remove stems (see note below)
- 1 can del monte (or other brand) diced tomatoes with garlic, basil and oregano
- 1/2 teaspoon each, garlic powder, ital seasoning, sea salt
- 1/2 cup shredded mozzarella (see note below)
- - fried italian sausage (can use pepperoni slices instead if you prefer)
- - fresh chopped basil or parsley, optional as in the tomatoes
How To Make pizza stuffed mushrooms

Step 1Oven to 375. Put mushrooms top side down in a cast iron skillet or sheet pan with sides. Fill each with WELL drained diced tomatoes, sprinkle seasonings, then cheese, and top with cooked sausage. Bake 15-20 min or until cheese melts. If desired, top with fresh herbs.

Step 2NOTES: I like the Italian cheese blend with parmesan rather than straight mozzarella. Also, the mushroom caps; chop stems and fry in with sausage (add onion and garlic if you want). To appease my in-laws lack of eating mushrooms, I will try it with halved green, orange, red or yellow bell peppers, seeds removed.
