Pizza Stuffed Mushrooms

6-8medium large mushroom caps, remove stems (see note below)
1 can(s)del monte (or other brand) diced tomatoes with garlic, basil and oregano
1/2 tspeach, garlic powder, ital seasoning, sea salt
1/2 cshredded mozzarella (see note below)
·fried italian sausage (can use pepperoni slices instead if you prefer)
·fresh chopped basil or parsley, optional as in the tomatoes
How to Make Pizza Stuffed Mushrooms
- Oven to 375. Put mushrooms top side down in a cast iron skillet or sheet pan with sides. Fill each with WELL drained diced tomatoes, sprinkle seasonings, then cheese, and top with cooked sausage. Bake 15-20 min or until cheese melts. If desired, top with fresh herbs.
- NOTES: I like the Italian cheese blend with parmesan rather than straight mozzarella. Also, the mushroom caps; chop stems and fry in with sausage (add onion and garlic if you want). To appease my in-laws lack of eating mushrooms, I will try it with halved green, orange, red or yellow bell peppers, seeds removed.
