Everyone who tastes this dish loves it ! Plus it's so easy to make, I always have a jar in my refrigerator.

Ingredients

  • 7 cups unpeeled cucumbers, sliced thin
  • 1 cup sliced onions
  • 1 cup sliced bell peppers
  • 1 tablespoon salt
  • 2 cups white sugar
  • 1 teaspoon celery seed
  • 1 teaspoon mustard seed
  • red pepper flakes, to your desired hotness

How To Make pickled cucumbers

  • Step 1
    In a large bowl, combine cucumbers, onions, bell peppers and salt. Set aside
  • Step 2
    Put vinegar, sugar, celery seed and mustard seed in a sauce pan. Bring to a boil. Remove from heat and let cool for 1 hour.
  • Step 3
    Pour vinegar mixture over cucumber mixture. Add red pepper flakes. Place in jars. Store in refrigerator. Keeps for 2 months.
